Here's a yummy dessert for the whole family!

Coconut Mango Pudding
2 C dried, fresh or frozen mango
3 ripe peaches or 1 banana, or 1 bag frozen unsweetened peaches
2 T organic, UNREFINED coconut oil
1 T vanilla Pinch salt Coconut milk to drizzle on top (optional)
-Cut dried mango into pieces with kitchen scissors, and soak in just enough fresh warm water to cover until soft (15 min)
-Cut peaches or 1 banana into small pieces for blending
-In a food processor or blender, blend the softened mango and some of its soaking water with the cut peaches/banana, vanilla and coconut and blend all until super creamy. Doing this in batches make it easier for your blender and makes it smooth.
-Sprinkle a dash of cinnamon on top and voila!
